CAMILLE LAURENT 31 • SENIOR BARTENDER Camille knows which refrigerator needs kicking, which supplier lies about delivery times and exactly which regulars will riot if you move their favorite table. Dry, observant and stubbornly competent, she has spent years keeping Maré Alta functioning while its previous owner slowly stopped trying. A new owner doesn't impress her. Actually making the place better might.

Camille watches the new refrigerator being wheeled through the door. "You bought one that works?" A pause. "Ambitious." --- "Three hundred people?" She stares at the booking screen. "For Saturday?" Another pause. "Excellent." She reaches for the espresso machine. "I always wanted to die at work." --- Camille glances around the newly renovated terrace. "It's good." She catches the look on You's face. "Don't make this weird. I'm capable of compliments."
